How to?
- 1 cup @uttam.gaaychhap Jowar Flour
- 2 tbsp @uttam.gaaychhap Sooji
- 1/4 cup Dahi
- Water to adjust the consistency
Then add:
- 1 green chili
- Coriander
- 1 tsp Oil
- Salt
- 1 tsp Eno
For the tadka:
- 1 tbsp oil + 1 tsp mustard seeds + coriander
- Green chutney
- Imlee ki chutney
- Tomatoes
- Chaat masala
- Sev
- Chana dal
- Kacchi keri

Ingredients used for corn filling:
- 4 to 5 boiled potatoes
- 1/2cup bell peppers
- 1/2cup boiled corn
- 1tsp salt
- 1tsp herbs
- 1tbsp green chilli
- Fresh coriander
- Mozzarella cheese
Ingredients used for besan batter:
- 1cup gaaychhap besan
- 1/2tsp gaaychhap turmeric
- 1/2tsp salt
- Water as required
Start by preparing the filling & shape them into balls.
Prepare besan coating, dip each ball into besan batter & fry until turn crispy.
Serve with mayo or chutney & your cheese corn balls are ready to enjoy.

Step 1: Roast
- 1 cup Uttam Sooji – dry roast in a pan till slightly golden and aromatic
- Dry fruits – roast separately in ghee and set aside
Step 2: Prepare saffron water
- In a separate pan, boil 3 cups of water
- Add a few strands of saffron and let it infuse
Step 3: Bring it all together
- In a kadhai, heat 1/2 cup ghee
- Add the roasted Sooji
- Pour in the saffron water gradually
- Stir in 1/3 cup sugar (adjust to taste)
- Add the roasted dry fruits
Step 4: Cook
- Stir continuously on low flame
- Cook until the mixture thickens and leaves the sides of the pan

- Soak 1 cup Uttam Daliya in water for 20 minutes
- Heat some oil in a kadhai
- Add 2 tbsp chopped garlic, sauté till golden

- Toss in ¼ cup boiled corn, sauté briefly
- Drain the soaked Daliya and add it to the pan
- Season with 1 tsp salt, pepper powder, and chilli flakes
- Pour in ¼ cup milk + ¼ cup water & mix well
- Cover and let it cook for around 15 minutes
- Once done, serve hot, topped with grated cheese
- Sprinkle a pinch of oregano and chilli flakes to finish

Here’s how to make the patty:
In a pan, add:
- 1 cup water
- 1 tsp ginger
- 1 green chilli
- 3 tsp Gaaychaap red chilli powder
- Salt to taste
Bring to a boil and stir in:
- 1/2 cup Uttam semolina (sooji)
Once thickened, mix in:
- 1/2 cup boiled potato
- 1/4 cup boiled green peas
- 1/4 cup boiled corn
- 1/4 cup capsicum
- 1/2 cup coriander leaves
Shape into patties and air-fry at 200°C for 25 minutes, until golden and crisp!
To assemble the burger:
Layer your patty in a toasted bun with lettuce, onions, tomatoes, a cheese slice, and a generous dollop of burger sauce or mayo.

- 1 cup Uttam bajri flour
- ½ cup fresh methi leaves
- 2 green chillies, chopped

- A pinch of haldi
- ½ cup dahi

- Water as required
Instructions :
- Mix bajri flour, methi leaves, green chillies, garlic, onion, sesame seeds, haldi, and salt in a bowl
- Add dahi and water gradually to make a thick, pourable batter
- Let the batter rest for 10–15 minutes
- Heat a greased non-stick pan or tawa
- Pour a ladle of batter and spread gently
- Cook on medium flame until golden and crisp
- Flip and cook the other side
- Serve hot with chutney, dahi, or pickle

Looking for a light yet filling meal? This Daliya Upma made using Uttam Daliya is just what you need! Packed with fibre, warmth, and flavor — it’s a perfect breakfast or dinner option that keeps you energized and happy.
Ingredients :
- 1 cup Uttam Daliya (Broken Wheat)
- 1 tsp mustard seeds
- 1 tsp jeera
- Chopped veggies of your choice (carrot, capsicum, peas)
- Salt as per taste
- Ghee or oil for tempering
- Green chilli and ginger paste
- 2.5 cups water
Instructions :
- Dry roast Uttam Daliya till aromatic and golden. Keep aside.
- In a pan, heat ghee/oil, add mustard, jeera, and green chilli-ginger paste.
- Add chopped veggies and sauté for 2-3 mins.
- Add roasted daliya and water. Season with salt.
- Cover and cook on low flame until soft and cooked through.
Garnish with fresh coriander and a squeeze of lemon if desired.

Ingredients :
- 🥣 1 cup Poha (flattened rice)
- 🌾 1/2 cup Uttam Sooji (semolina)
- 🥛 1/2 cup Dahi (curd)
- 🧂 Salt to taste
- 🛢️ 1 tbsp Oil
- 🌱 1 tbsp Mustard Seeds
- 🍃 1 tbsp Curry Leaves
- 🌶️ 2 Dried Red Chillies
- ⚪ 1 tbsp Sesame Seeds
- 🔥 1 tbsp Podi Masala (or more, as per taste)
Recipe :
- Rinse poha in water and let it sit for 5 minutes until soft.
- In a mixing bowl, combine poha, sooji, and dahi to make a thick batter.
- Let the batter rest for 10–15 minutes. If it gets too thick, add a splash of water.
- Add salt. Mix & shape into bites. just before steaming. Mix gently.
- Pour the batter into greased idli moulds and steam for 10–12 minutes on medium to low heat.
- Let the bites cool slightly
- In a pan, heat oil and add mustard seeds, curry leaves, dried red chillies, and sesame seeds.
- Once they begin to splutter, add podi masala and roast it gently.
- Add the idlis and toss well until evenly coated and lightly crispy.

Ingredients :
For Batter:
- 1 cup Gram flour (Besan)
- 4-5 tbsp Curd (Dahi/Yogurt)
- Salt to taste
- 1/3 cup Water
For Bhurji:
- 1 medium Onion, chopped
- 1/2 medium Capsicum, chopped
- 1/2 medium Carrot, chopped
- 1/2 medium Tomato, chopped
- 2 Green Chilies
- 2 tsp Turmeric powder (Haldi)
- 1 tsp Red Chilli Powder
- Salt to taste
- Coriander, finely chopped
- 1/2 tsp Mustard seeds
- 1/2 tsp Jeera (Cumin seeds)
Instructions :
- Prepare the batter by mixing gram flour, curd, water, and salt in a large bowl.
- Mix well to form a thick batter (similar to dosa batter). Set aside.
- Heat a tava, add oil, and splutter mustard seeds and jeera. Fry onions until translucent.
- Add tomatoes and cook until slightly soft.
- Add capsicum, green chilies, and carrots. Sauté until vegetables are cooked.
- Add spices (turmeric, cumin, and red chili powder).
- Pour in the batter, covering all the vegetables.
- Cook on low heat for a few minutes, stirring occasionally, until the batter is cooked and edges are brown.
- Stir-fry until the mixture forms a bhurji texture.
- Serve hot with whole wheat bread or paratha.

- 3 tbsp Gaay Chaap Besan
- 1/2 tsp turmeric (haldi)
- Salt to taste
- 2 cups water
For the Tadka :
- 1 tbsp ghee
- 1 tsp cumin seeds (jeera
- 1/2 tsp mustard seeds
- 1 bay leaf
- 2 red chillies
- 1 tsp Gaay Chaap Kashmiri red chilli powder
Instructions :
- In a bowl, combine yogurt, besan, turmeric, salt, and water. Whisk well until smooth, ensuring there are no lumps.
- Transfer the mixture to a pan and cook on medium heat, stirring continuously, until it thickens to a smooth consistency.
- For the tadka, heat ghee in a pan, then add cumin seeds, mustard seeds, a bay leaf, dried red chilies, and Kashmiri red chili powder.
- Pour the tadka over the kadhi and mix well.
- Once fully cooked, serve hot with rice and papad. Enjoy

- 8-10 Curry Leaves, chopped
- 1 Green Chilli, chopped
- 1/4 cup Carrots, grated

- 3 cups Water
- Fresh Coriander, chopped (for garnish), Ghee or oil (for cooking)
Instructions :
- In a large bowl, mix ragi flour, ginger, cumin seeds, curry leaves, green chilli, carrots, onion, and salt.
- Add 3 cups of water and stir to make a smooth batter. Cover and let it rest for 10 minutes.
- After resting, add fresh coriander to the batter and mix well.
- Heat a tawa (griddle) on medium heat, add 2-3 drops of oil, and wipe it off with a tissue or cloth.
- Stir the batter properly, then pour it onto the hot tawa in a circular motion to form a dosa.
- Cook on low flame for 7-8 minutes. Drizzle some ghee on top.
- Once crisp, serve hot and enjoy!

- 1 medium Potato, boiled

Instructions :
- Roast rava in a pan until lightly golden, then add water and mix to a smooth texture. Set aside.
- In a separate bowl, smash the boiled potato. Add chopped carrots, capsicum, red bell pepper, onion, coriander, garlic, ginger, and green chilies.
- Add the roasted oats, turmeric powder, red chili powder, jeera powder, and salt to the vegetable mixture. Mix everything well.
- Shape the mixture into small patties.
- Coat each patty with rava.
- Shallow fry the patties on medium heat until they are golden brown on both sides.

Instructions :
- Mix together sooji, curd, salt as per taste and water to adjust the consistency.
- In goes your favourite pizza toppings (use finely chopped veggies) and green chillies.
- Mix chilli flakes and oregano in the batter followed by half a packet of eno and 1 tbsp of water. Mix, and pour it in a greased dish.
- Top it off with generous portion of pizza sauce, swirl it across. Add cheese, cherry tomatoes, olives and herbs.
- Steam it for 13 minutes or until a toothpick comes out clean.

- In a bowl, mix besan, water, spring onions, soya sauce, salt, and sesame seeds
- Mix it well and add water for consistency as needed.
- Take a bread slice, coat it well on both sides with the batter, and pan-fry until crispy and golden.
- Serve hot with some chilli oil for that extra kick!

- 2 tsp chilli paste

- Start by mixing the above mentioned ingredients and adjust the consistency using water. Rest the batter for 10 minutes.
- Heat a tawa, add 2 ladles of the batter and make round chillas.
- Drop some ghee on the sides and on top of the chilla to cook it nicely.
- Once done from both the sides, apply chutney, add veggies of your choice followed by grated paneer and chaat masala.

- 1 cup Moringa leaves
- 1-1.5 cups Water
Instructions :
- Take jowar aata in a bowl.
- Add turmeric and chili powder to the bowl.
- Add jeera and ajwain to the mixture.
- Add chopped vegetables (onion, carrots, coriander, green chilies, and moringa leaves) to the mixture.
- Add a little water to the mixture to form a dough.
- Take a ball of the mixture, place it on butter paper or plastic wrap, and tap with your hand to form a roti.
- Heat a pan, add ghee, and cook the paratha until golden brown.
- Serve the paratha hot with dahi (yogurt) and enjoy!
